Beef Pares - Kanto Style


Beef Pares is a comfort food soup enjoyed by most Filipinos especially during rainy season because of it's savory taste.

It is considered as a food-to-go for most Filipino working people as it is very common to see street vendors selling them in cart.  From the word itself "Pares" means it is serve paired with "Sinangag".  A Filipino term used for fried rice and a staple food for most Filipinos especially during breakfast. 

Beef Pares has become popular among Filipino working class not only because of it's distinct taste but also it is usually sell in cheap price in a complete meal.  

The beef meat used is short ribs, shanks or flanks but the most common is brisket.  You can cut the meat into one inch cubes if it will be served for your family but if it use for selling in kanto-style or street-style they usually cut them into reaally small cubes.

The broth can be in thin or heavy sauce depending on your preferences.  Kanto-style is usually in heavy sauce to compliment well with fried rice. 

Here's the ingredients  and how to cook Beef Pares in Kanto Style. 

Prep Time:         10 minutes
Cooking Time:   30 minutes
Total Time:         40 minutes
Servings:             4 - 6

Ingredients:
  • 1 kl beef brisket, cut into small cubes
  • 5 cloves garlic, crushed
  • 2 pc onion,peeled and quartered
  • 2 thumbs ginger, minced
  • 3 star anise
  • a pinch salt
  • a pinch of ground black pepper
  • 3 tbps. cooking oil
  • 3 tbps. fish sauce
  • 4 tbps. soy sauce
  • 4 to 5 cups of water
  • 1/4 cup corn starch
  • 3 tbps. brown sugar
  • 1 bunch scallion, chopped
How to Cook:
  1. In a pan medium heat oil.
  2. Saute ginger, onion and garlic.
  3. Add beef.
  4. Seasoned with fish sauce until light brown.
  5. Let it simmer for a few minutes.
  6. Add water and soy sauce.
  7. For added flavor, you can add Beef Knorr Cubes
  8. Sprinkle a pinch of salt and ground pepper.
  9. Add star anise.  This will give the beef a distinct taste and aroma.
  10. Let the beef boil until the meat is tender. 
  11.  Add brown sugar to give a sweet taste.
  12. Add cornstarch to create a thick sauce.
  13. Once cooked, garnished it with chopped scallions.   
Best served hot with garlicky Sinangag!

Dinengdeng


Dinengdeng is a Filipino vegetable dish that originated from the Ilocos Region in the Philippines.

A recipe that composed of different vegetables that are usually grown in one’s family backyard. This dish is almost similar with bulanglang and pakbet.  Adding to it's distinct taste is the use of fried or grilled fish and “bagoong na isda” which is also a popular product made in the Ilocos Region.  It is basically a combination of different boiled vegetables with grilled or fried fish in anchovy sauce.

For anchovy sauce or "bagoong na isda"  it is recommended to use in moderation because of it salty content.  Saltiness may vary depending on how it is prepared.

For fish, you can use milk fish, galunggong or even tilapia.  But the most popular fish ingredient is the milk fish.

If you are going to grill the fish instead of frying, make sure not to remove the scale.  The advantage of grilling the fish is that it add additional taste to the dish.

Since this dish consists mostly of vegetables this may be unpopular for kids. But the nutritional content of this dish cannot be taken for granted.

I too had similar experience when I was little kid.  My siblings and I had a hard time swallowing vegetables.  And it has always been a nighmare for us if we know that it is the dish served in the family table.  But our parents did not stopped for us to understand the importance of eating vegetables.  And as we grow old now, we started appreciating this dish.

You can also try this dish in your family table.  It is a healthy food recipe good for your family.

Prep Time:        10 minutes
Cooking Time:  30 minutes
Total Time:        40 minutes
Serving:              6

Ingredients:

  • 4 small tomato 
  • 1 or 2 medium onion chopped
  • 2 cups squash 
  • 5 to 10 pieces small to medium sized okra
  • 2 medium eggplat cut into cubes
  • 2 medium sweet camote cut into cubes
  • 1 whole milk fish (bangus) sliced into four.  Can be fried or grilled.
  • 1 bundle malunggay stalk, removed the outer parts
  • 1 bundle string beans sliced into 3 inch
  • piece bitter gourd (ampalaya) sliced diagonally
  • 2 to 3 tablespoons bagoong isda unprocessed fish sauce
  • 3 cups water





How to Cook:
  1. In a pan, add cooking oil.
  2. Fry the sliced bangus until light brown.
  3. Remove from pan.
  4. In another cooking pot, add water to boil.
  5. Add tomato, onion and bagoong na isda.  Let it boil for 1 minute.
  6. Put camote, string beans, squash.  Cook in medium heat.
  7. Add ampalaya, eggplant, malunggay stalk and okra.
  8. Add fried bangus.
  9. Serve to taste.

Potato Croquettes



Sunday is a family day for us.  It is a time when most of the family members are present.  We used this day to relax and uwind from a tiring weekdays.  For this day, Alexis prepared Potato Croquettes for our snack.  This is her fave snack in school and she wants us to try it also.

Croquettes originated in France.  But the term "Potato Croquettes" started America.  In other countries different terms are used for it.  In England, it is called "potato crunchies"  while Australians called it "potato gems".

Potato Croquettes can be an exciting side dish or snacks for the whole family. It is almost similar to a hash brown in taste. It is made-up of mashed potatoes stuff with cheese combined with either bacon, ham, or hotdog deep-fry until it becomes golden brown crispy.  It is dipped in mayonnaise and ketchup to create a savory bite. But for this recipe, Alexis created a special dipping sauce which we enjoyed so much and has added twist to this afternoon and midnight snack.  

Potato croquettes can also be a perfect side dish for beef, pork, chicken and fish.

Prep Time:        10 minutes
Cooking Time:  20 minutes
Total Time:        30 minutes
Servings:            6

Ingredients:
  • 6 medium size potatoes
  • 3 medium size eggs
  • 2 tablespoon evaporated milk
  • 1 cup of bread crumbs
  • 1 cup of all-purpose flour
  • a pinch of salt
  • a pinch of ground white pepper
  • cooking oil
Inside fillings:
  • ·    2 regular hotdogs cut into small pieces; or can be ham or cheese depending on your choice
Dipping Sauce:
  •      1 pack Nestle cream
  •      a pinch of salt
  •      a pinch of pepper

How to Cook:
  1.   In a pan with water,  boil the potatoes.
  2.   Once boiled, removed from the pan and let it cool for a few minutes.
  3.   Remove the skin and mashed the potatoes
  4.   Add milk, 1 egg, salt, pepper and flour. Mix throughly.
  5.   Scoop the mixture, add hotdog fillings and make a circle-like form.
  6.   Dip fry in medium heat until the color of the sides turns golden brown.
  7.   When done, transfer to a plate with paper towel to remove excess oil.
How to Cook Cream Sauce:
  1. In a small pan, pour in Nestle cream.
  2. Add a inch of salt and pepper to taste.
  3. Simmer for a few minutes.
  4. Remove from pan.
Best served with your favorite cup of coffee or hot chocolates!
