Bangus sa Tausi

 

Bangus sa Tausi is a perfect recipe for those who would like to give a twist to their ordinary fried bangus recipe.  

This recipe is also a good alternative for leftover fried bangus.

Main ingredient of Bangus sa Tausi aside from "Bangus" or milkfish is Tausi or black beans.

Tausi is a fermented black soybeans in salt.  Common in most Asian cuisines.  It gives flavor to steamed dishes and stir fries.  The taste is too salty that you need to rinse the beans to get rid of its salty taste.

The black beans is a good source of protein and fibre that helps reduce body fat.  But it should also be eaten with moderation because of its salty component.

The way you fried bangus in this recipe is through cornstarch coating.  Which helps eliminate unwanted oil splash.

So for those who hates frying bangus because of this cooking dilemma, this technique is a welcome relief.

The simple recipe of Bangus sa Tausi is definitely a quick and easy recipe for all busy moms.

Prep Time:         15 minutes
Cooking Time:   20 minutes
Total Time:         35 minutes
Servings:              3-4 

Ingredients:
  • 1 whole bangus, cut into 5 or 6 pieces
  • 1/2 cup cooking oil
  • 5 cloves of garlic, minced
  • 1 piece onion
  • 2 pieces tomatoes
  • 1 thumb-size ginger, julienne cut
  • 1 pack black beans
  • 1/4 cornstarch
  • 1 teaspoon fish sauce (patis)
  • a pinch of ground pepper
  • 1 cup water
                            

How to Cook:
  1. Clean and coat bangus with cornstarch.
  2. In a heated pan, put oil.
  3. Fried the coated bangus until golden brown and slightly crispy.
  4. Remove the fried bangus from the pan.
  5. In a separate pan, put 1 tablespoon of oil.
  6. Saute, onion, garlic and ginger.
  7. Seasoned with 1 teaspoon fish sauce.
  8. Pour in 1 cup water or depending to your prefer amount of sauce.
  9. Add the black beans and stir.  Make sure to rinse the black beans first to get rid of excess saltiness.
  10. Add the fried bangus.
  11. Seasoned with ground pepper.
  12. Let it simmer for 2 minutes until fully cooked.
  13. Remove from pan and transfer in a serving bowl.
Serve it hot with steamed rice.
