Potato Croquettes



Sunday is a family day for us.  It is a time when most of the family members are present.  We used this day to relax and uwind from a tiring weekdays.  For this day, Alexis prepared Potato Croquettes for our snack.  This is her fave snack in school and she wants us to try it also.

Croquettes originated in France.  But the term "Potato Croquettes" started America.  In other countries different terms are used for it.  In England, it is called "potato crunchies"  while Australians called it "potato gems".

Potato Croquettes can be an exciting side dish or snacks for the whole family. It is almost similar to a hash brown in taste. It is made-up of mashed potatoes stuff with cheese combined with either bacon, ham, or hotdog deep-fry until it becomes golden brown crispy.  It is dipped in mayonnaise and ketchup to create a savory bite. But for this recipe, Alexis created a special dipping sauce which we enjoyed so much and has added twist to this afternoon and midnight snack.  

Potato croquettes can also be a perfect side dish for beef, pork, chicken and fish.

Prep Time:        10 minutes
Cooking Time:  20 minutes
Total Time:        30 minutes
Servings:            6

Ingredients:
  • 6 medium size potatoes
  • 3 medium size eggs
  • 2 tablespoon evaporated milk
  • 1 cup of bread crumbs
  • 1 cup of all-purpose flour
  • a pinch of salt
  • a pinch of ground white pepper
  • cooking oil
Inside fillings:
  • ·    2 regular hotdogs cut into small pieces; or can be ham or cheese depending on your choice
Dipping Sauce:
  •      1 pack Nestle cream
  •      a pinch of salt
  •      a pinch of pepper

How to Cook:
  1.   In a pan with water,  boil the potatoes.
  2.   Once boiled, removed from the pan and let it cool for a few minutes.
  3.   Remove the skin and mashed the potatoes
  4.   Add milk, 1 egg, salt, pepper and flour. Mix throughly.
  5.   Scoop the mixture, add hotdog fillings and make a circle-like form.
  6.   Dip fry in medium heat until the color of the sides turns golden brown.
  7.   When done, transfer to a plate with paper towel to remove excess oil.
How to Cook Cream Sauce:
  1. In a small pan, pour in Nestle cream.
  2. Add a inch of salt and pepper to taste.
  3. Simmer for a few minutes.
  4. Remove from pan.
Best served with your favorite cup of coffee or hot chocolates!
