Ginataang Kalabasa at Sitaw


Ginataang Kalabasa at Sitaw is a Filipino vegetable stew which is made up of kalabasa and sitaw  cooked in coconut milk and spice up with either meat, shrimps, crabs or fish.  The use of coconut milk in this recipe helps create a creamier taste to the dish.   

This is a favorite recipe of Filipino moms who are very particular for their children's nourishment.  As kalabasa is rich in Vitamin C and beta-carotene which is good for the eye.  While coconut milk helps build muscle and helps reduce fat.

Also since the Philippines is rich in coconut milk produced, you will notice that most Filipinos used  coconut milk in most of their dishes.  Taking advantage of the abundance of coconut milk in most localities.

As I have mentioned above, we can use different  ingredients in Ginataang Kalabasa and Sitaw.  But in this recipe, I will be using pork meat.  

Ingredients:

  • 1 bundle string beans or sitaw cut into 2 inches length
  • 1/4 kalabasa cut into cubes
  • 1/4 meat cut into small strips
  • 1/4 cup shrimp paste or bagoong
  • 3 cloves garlic crushed
  • 1 onion minced
  • 2 tablespoons cooking oil
  • 1 tablespoon fish sauce
  • 1 pk coconut
  • 1 siling haba
  • a pinch of pepper


How to Cook:

  1. In a medium heat pan, saute the onion and garlic until golden brown.
  2. Add the meat.  Cooked it for 2 minutes until slightly brown and fried.
  3. Add a tablespoon of fish sauce.  Fish sauce will help create an oily look to the dish.
  4. Add bagoong depending on the saltiness of it.
  5. Pour in the coconut milk and let it boil.
  6. Add kalabasa and sitaw.  Cover it with pan and let it boil, stir once in a while.
  7. Add pepper to create additional taste.
  8. You can also add siling haba. (optional)
Serve it with hot rice.
